A dish that reminds us of our grandmother, of the village, of carefree laughter and joy at the table after playing, where the food was eaten with great appetite! How many of us didn't catch our grandmother making couscous in the large pan, spreading it out to dry (while we sneaked in and ate the raw dough), and then placing it in pillowcases to breathe-dry!
Ingredients:
1 chicken, cut into pieces
500g couscous
1 large onion, finely chopped
2 cloves of garlic, finely chopped
1 tomato, crushed or fresh tomato
1 tsp red pepper flakes
1/2 tsp turmeric
1 tsp thyme
Salt and pepper
A little olive oil
1/2 cup white wine
Instructions: In a pot, saute the chicken until golden brown on all sides. Add the onion and saute it. Once it is cooked, add the garlic and quickly stir to prevent it from burning. Pour in the wine and add the tomato. Let it come to a boil and then transfer everything to a casserole dish. Add 2-3 cups of vegetable broth and stir frequently. Cook the dish with the lid slightly ajar to allow the liquids to be absorbed.
Prepare the couscous according to the package instructions. Serve the cooked chicken on a bed of couscous and enjoy this nostalgic and flavorful dish that brings back memories of family gatherings and the taste of grandma's cooking.
