Our ingredients:
• 500g ground chicken (mixed breast and thigh)
• 2 dried onions, finely chopped
• 1 clove of garlic, minced
• 1 tsp Dijon mustard
• 100g breadcrumbs or crushed baguette
• 50g olive oil
• Mixed peppers and salt
• 1 egg
• ? cup finely chopped parsley
• 2 tbsp finely chopped mint

Directions

In a frying pan, saute the onions with a little olive oil until they become translucent and sweet. Then add the minced garlic and set the pan aside. Once it cools down, transfer the onions and garlic to a bowl along with the ground chicken and all the remaining ingredients.
Mix the ingredients thoroughly until well combined. Let the mixture rest in the refrigerator for one hour to allow the flavors to meld together. After an hour, shape the mixture into small meatballs, approximately 3-4cm in diameter.
Place the meatballs on a baking tray lined with parchment paper and bake in a preheated oven for about 30 minutes, until golden brown and cooked through.


For the Dijon sauce:
• 5 tbsp heavy cream
• ½ tsp Dijon mustard
• 2 tbsp cream cheese
• 2-3 sprigs of finely chopped parsley
Place all the sauce ingredients in a blender and mix until well combined.
