Roll with Ground Beef, Spinach, Bacon, and Cheeses

800g mixed ground beef

1 package frozen spinach (approximately 400g)

200g feta cheese

15 slices of bacon

2 eggs

1 shot of ketchup

80g bread crumbs

2 finely chopped onions (puree)

2 cloves of garlic (puree)

½ cup of milk

200g mixed cheeses

1 tsp thyme

Salt, pepper, and ground spices to taste

Directions

In a small pan, heat a little olive oil and saute the onion and garlic puree until any moisture evaporates and the onion begins to turn golden brown (caramelized). Let it cool.

Next, finely chop 6-7 slices of bacon into very small pieces and lightly saute them in the pan.

In a bowl, combine the ground beef with all the ingredients (except for the cheeses, remaining bacon slices, and spinach) and mix well. The mixture should not stick to the bowl, and the color of the beef should change due to the blending of ingredients.

Spread a large sheet of parchment paper on a clean countertop. Place the beef mixture on the parchment paper and shape it into a rectangular shape.

Next, spread the thawed, rinsed, and drained spinach evenly over the beef mixture. Layer the remaining bacon strips on top, followed by the mixed cheeses. Finally, place sticks of feta cheese along the length of the roll.

Using both hands, lift the edges of the parchment paper closest to you and gently roll the beef mixture over the fillings. The roll should make one complete turn, covering the fillings and feta cheese. Press the parchment paper along the length of the roll to secure it, and lift the edges again to completely seal the beef and create a caramelized crust. Tightly fold the edges and place the roll on a baking tray.

Bake for approximately 1 hour and 15 minutes in a preheated oven at 180°C.

While the roll is baking, prepare your choice of roasted potatoes.

After the cooking time has elapsed, remove the parchment paper and add your chosen potatoes to the side of the roll (lemon-roasted potatoes, paprika-seasoned potatoes, or potatoes with rosemary and thyme). Continue baking for another 45 minutes until the potatoes are cooked and the roll has a beautiful color.

Allow the roll to cool for a while before slicing it into portions.
