Bread patties, also known as "batirikoftedes" or "pseudo-keftedes," or the keftes(patties) of the poor... however you want to call them, these unique, economical, delicious, easy, and quick patties will surely impress with their taste. Derived from times of scarcity when families had to make do with whatever was left—some bread, a little onion, a few herbs from the garden, a potato—whatever remained, these ingredients were transformed from nothing into a small miracle of flavor. Let your imagination run wild with the ingredients you have in your refrigerator and pantry, and create the most delicious economical patties!
Our Ingredients
• 1 slice of stale bread
• 1 grated potato
• 1 grated and squeezed carrot
• 1 grated and squeezed zucchini
• ½ bunch of dill
• ½ bunch of parsley, finely chopped
• 2-3 fresh spring onions, finely chopped
• 1 dry onion, finely chopped
• 1 tsp minced garlic
• A bit of mint
• ½ red bell pepper, finely chopped
• ½ green bell pepper, finely chopped
• 1 tsp baking powder
• A bit of flour
• A bit of wine
• Olive oil for frying
Remove the crust from the bread and soak it in watered wine. Squeeze it well and add the rest of our ingredients.
Mix them until you can shape them. Form small balls and press them lightly from the top.
Coat the patties with flour, shake them (toss the ball from one hand to another with quick movements) to remove excess flour, and fry them in medium to hot oil. (Add a few at a time to maintain the oil temperature.)
Place them on absorbent paper to drain the oil and make them crispier.
Serve them warm.
