Our Ingredients
2 eggplants
2 zucchinis
2 green bell peppers
2 yellow bell peppers
2 red bell peppers
2 portobello mushrooms, sliced
2 tomatoes, sliced

Directions

We thoroughly wash our ingredients. We slice the eggplants into approximately 1-1 ½ cm thick slices. We cut the zucchinis into slices of about 1 cm thickness. We drizzle them with olive oil and lay them on a baking tray for 25 minutes at 200°C.
However, we grill the whole bell peppers, turning them to roast evenly. Once roasted, we take them out of the oven and seal them in a clean plastic bag for a few minutes. We peel and remove the stem and seeds, then cut them into quarters.

We can serve them with feta cheese sauce, yogurt sauce, or balsamic glaze, accompanied by cheeses or charcuterie of our preference.
