Caramelized Onion Focaccia

Focaccia is a type of Italian bread or flatbread that was traditionally made in Italy and can be considered a precursor to pizza. In the old days, during times of scarcity, homemakers would make focaccia with whatever ingredients they had in the fridge. You could find focaccia with vegetables, potatoes, mushrooms, tomatoes, olives, or whatever was on hand. They often added herbs like rosemary, oregano, and thyme to enhance the flavor. Here, we'll make focaccia with caramelized onions that have been simmered in wine, combined with cherry tomatoes and slices of olive fillets. It's a very tasty suggestion that you should try, and it can be prepared during fasting periods.

 

For the dough:

440 grams of type 00 flour
1 packet of dry yeast
2 teaspoons of sugar
220 grams of lukewarm water
1 ½ teaspoons of salt
For the topping:

2 dry onions, sliced
1 clove of garlic, finely chopped
3/4 cup of red wine
2 teaspoons of sugar (for caramelizing the onions)
Olive oil
Cherry tomatoes
Slices of olive fillets
Rosemary

Directions

Let's start with our dough. In a small amount of lukewarm water, mix the yeast and sugar. Wait for it to activate. In a large bowl, combine the flour with the salt. Then, add the activated yeast mixture and water to the flour. Work the dough until it becomes smooth. Allow it to rest for 1-1.5 hours (depending on room temperature).

While the dough is resting, in a skillet or frying pan, heat a little olive oil over medium heat and gently saute the onions until they become tender. Once they've softened, add the garlic and deglaze the pan with red wine and sugar. Continue stirring gently until the wine has evaporated, and all the liquid is gone. Add rosemary, and then set the caramelized onions aside.

Once the dough has rested, open it on a baking tray with a diameter of about 30 cm (12 inches) and add the caramelized onions, cherry tomatoes, and slices of olive fillets on top.

Bake in a preheated oven at 180°C (350°F) for approximately 50-60 minutes until it turns golden brown.
