What better healthy snack for school, the office, or even a relaxing evening after a busy day than to sit down and enjoy a fragrant, flavorful, and nutritious piece of spanakopita. With plenty of green onions, dill, leeks, and delightful country-style trahana that elevates and enhances its taste.

 

1.5 kilograms of blanched and chopped spinach

3 leeks, finely chopped

1 bunch of fresh green onions, finely chopped

3 eggs

Olive oil

A little butter

Salt, pepper, sesame seeds

200 grams of Greek feta cheese

150 grams of trahana

1 bunch of dill

1 package of ready-made phyllo dough or instructions for homemade phyllo dough for pies.

Directions

In a deep frying pan, saute the green onions and leeks. Add the spinach after blanching and draining it well. Then, add the dill and remove it from the heat, allowing it to cool.

While the filling cools, open the phyllo dough (see instructions here) or use ready-made phyllo dough.

Place half of the phyllo sheets on the bottom and brush melted butter in between. Once the filling has cooled, add 2 beaten eggs, crumbled feta cheese, and trahana. Mix everything well and spread it on top of the phyllo sheets in the baking dish. Place the remaining phyllo sheets on top, following the same procedure as before, and brush the final sheet with beaten egg. Sprinkle with sesame seeds.

Bake in a preheated oven for about one hour and fifteen minutes.
