The basic batter for crepes, whether sweet or savory. To avoid limiting yourself to improvisation and to enhance your enjoyment, I have included some attractive suggestions after the recipe!

Our ingredients:

1 cup all-purpose flour

1 ½ cups milk

2 eggs

1 tsp salt

1 tsp sugar

3 tbsp melted butter

Directions

In a bowl, mix the flour, sugar, and salt. Add the eggs and milk, and mix until you have a smooth mixture. We want the batter to be free of lumps. You can also use a hand blender to mix it.

To make the crepes, you'll need a non-stick pan. Heat the pan and lightly butter it using a brush. Once it is adequately heated, add enough batter to cover about two-thirds of the pan. Lift and rotate the pan to spread the batter evenly across the surface.

The batter should be thin and airy, not thick like pancakes. Once you see that the crepe is easily detachable without needing to be loosened, it is ready to be flipped. Repeat the process until you finish the batter.

Suggestions for sweet crepes:

  • Nutella with banana and Oreo cookies
  • Caramelized sweetened condensed milk (dulce de leche) with strawberry compote
  • Butter caramel with banana and nuts
  • Seasonal fruits with honey and nuts
  • Rolled with ice cream and sweet orange sauce
  • Banoffee (banana, caramelized sweetened condensed milk, and Oreo cookies)
  • Stuffed with pieces of mosaic cake

  • Classic: ham, cheese, and tomato
  • Village-style: feta cheese, tomato, bell pepper, and olive fillets
  • Mozzarella, tomato pesto, prosciutto, and mayonnaise
  • Mayonnaise, tomato, bacon, mushrooms, and mozzarella
  • Sausage with BBQ sauce, cheese, and French fries
  • Grilled vegetables with tomato, olives, and guacamole
  • Various special cheeses like blue cheese or gorgonzola with chicken, tomato, and mayonnaise
  • Stuffed with sliced beef patties, bacon, tomato, etc.
