The basic batter for crepes, whether sweet or savory. To avoid limiting yourself to improvisation and to enhance your enjoyment, I have included some attractive suggestions after the recipe!
Our ingredients:
1 cup all-purpose flour
1 ½ cups milk
2 eggs
1 tsp salt
1 tsp sugar
3 tbsp melted butter
In a bowl, mix the flour, sugar, and salt. Add the eggs and milk, and mix until you have a smooth mixture. We want the batter to be free of lumps. You can also use a hand blender to mix it.
To make the crepes, you'll need a non-stick pan. Heat the pan and lightly butter it using a brush. Once it is adequately heated, add enough batter to cover about two-thirds of the pan. Lift and rotate the pan to spread the batter evenly across the surface.
The batter should be thin and airy, not thick like pancakes. Once you see that the crepe is easily detachable without needing to be loosened, it is ready to be flipped. Repeat the process until you finish the batter.
