The most delicious sweet, juicy figs come from my garden. I am from Kimi and its figs are famous all over the world. The fig trees here are so full - the branches are almost bending from the weight of the figs... I will pick some to make jam, but because they are so sweet, I won't add sugar, but instead I will use fig molasses (or if you don't have it, you can substitute with honey). Aromatic and wonderful fig molasses or honey that will bring out the best in the figs and make my jam wonderful!!!

Ingredients:

1 kilogram of figs

1.5 tablespoons of fig molasses or honey

1 tablespoon of lemon juice

1 cinnamon stick

100 grams of water

 

Directions

After washing our figs thoroughly, we clean the stems. I leave the skin on because it's thin and tender, but you can peel them if you prefer. Cut the figs into small pieces.

In a saucepan, add the figs, water, and cinnamon stick and turn the heat to medium-high and stir constantly. We don't want the jam to stick to the bottom. After 45 minutes, the jam will become thicker. At this point, add the fig molasses or honey and lemon juice, and stir well.

While it's still hot, pour the jam into sterilized jars, seal them, and turn them upside down. When you open the jar, store it in the refrigerator.
