Coming from our neighboring country Italy, Limoncello is one of our favorite drinks that can be served at any time - after a meal, as a treat, or even in the evening for relaxation!
The ingredients are simple: sugar, lemons, and Cretan raki.
Here's what you'll need:
Start by washing the lemons, then carefully pat them dry. Using a peeler or a sharp knife, remove the outer peel of the lemons. Be careful not to include the white pith, as it can make the drink bitter. (You can use the white pith to make candied lemon peel.)
Take a large jar with a wide opening and place the lemon peels inside. Pour the raki (or vodka) over the peels and close the lid tightly. Store the jar in a cool, shady place for 15-20 days.
After the 20-day infusion period, pour the sugar and water into a saucepan and let them boil for 5 minutes. Allow the syrup to cool, then add it to the jar with the infused lemon peels. Let it sit for another 5-7 days.
Finally, carefully strain the liquid from the jar using a cheesecloth or a coffee filter and transfer it into bottles.
Serve Limoncello straight or with crushed ice.
