The quickest, easiest, and most economical pie you have ever made. It is so delicious that if the pieces aren't eaten, it will haunt your mind! It is quite affordable with ingredients that we all have at home. Let's take a look...
Ingredients:
For the filling:
400g Carolina rice
1200g water
1 tsp butter
1 tsp ground cinnamon
1/2 tsp cloves
150g sugar
1 vanilla bean
Salt
200g crushed walnuts (optional)
100g raisins (optional)
White or brown sugar for sprinkling on top of the pie
For the dough:
500g all-purpose flour + extra for rolling
250g lukewarm water
1 tsp white vinegar
50g olive oil
1 tsp salt
3 tbsp melted butter for brushing between the layers
In a bowl, sift the flour and make a well in the center. Add water, vinegar, olive oil, and salt. Knead the dough thoroughly and divide it into 6 equal pieces. Place the pieces back in the bowl, cover with plastic wrap, and let the dough rest in a warm place for at least one hour.
While the dough is resting, prepare the filling. In a pot, combine the rice (after washing it thoroughly), water, and a pinch of salt. Let it boil until fully cooked. Once cooked, remove it from the heat and add sugar, vanilla, cinnamon, cloves, walnuts, and raisins. Mix well.
After the dough has rested, start rolling out the sheets one by one. Place 3 sheets on the bottom, brushing melted butter in between. Pour the filling and spread it evenly. Continue by rolling out the other 3 sheets, repeating the same process. That is, place the sheets and brush melted butter in between. Once the pie is assembled, add a little water to the remaining melted butter and brush the surface of the pie. Score the pieces and sprinkle with sugar.
Bake at 180°C (350°F) until the pie turns golden brown.
