Revani of Veria is a traditional Greek dessert that has captured the hearts of all with its soft texture and delicate flavor. Originating from Macedonia, this dessert is filled with flavor and is usually served with a generous glass of cold water alongside coffee. One taste will convince you of its authentic taste!!!

Our ingredients:

280g coarse semolina

280g sugar

200g self-raising flour

3 large eggs

1/2 tsp baking powder

1/2 tsp baking soda

2 vanilla extracts zest of

2 oranges

1 strained yoghurt a pinch of salt

For the syrup:

800g water

800g sugar

100g honey

1 vanilla extract juice of

1/2 orange orange peel

1 cinnamon stick

 

Directions

First, we make the syrup, so it has cooled down when the revani comes out of the oven (cold syrup, warm revani). As soon as it boils 3-4 times, we remove it from the heat and start making the revani.

In a mixer, we beat the sugar with the eggs until the mixture becomes frothy and white. In a bowl, we put the flour, zest, vanilla, baking powder, semolina, and a pinch of salt, mix them lightly to homogenize the ingredients, and add them to the mixer with the eggs and sugar. Then we add the yoghurt, and with a spatula or spoon, we gently mix all the ingredients.

We take our baking tray (30x25) and butter it very well, spreading some semolina everywhere to stick it to the butter.

We pour the mixture inside and spread it everywhere. We bake at 180 degrees Celsius in a preheated oven for 30-35 minutes.

As soon as it comes out, we pour the cold syrup on top, and we wait (if we can hold on) for it to absorb all the syrup.

We serve with a scoop of ice cream!!!
