Delicious, flavorful, quick, and tasty barley with shrimp. We can prepare it for a nice dinner, on a special occasion (like Valentine's Day), or even during fasting days since it doesn't include any animal products. The whole deliciousness comes from the base broth (bisque) that we'll make first, and combined with the vegetables, it elevates the dish. Let's get started.
Our Ingredients:
500g shrimp
1 ½ liters shrimp broth (bisque)
1 carrot, cut into small slices
2 zucchinis, thinly sliced
1 clove of garlic, whole
1 large dry onion, finely chopped
100g white wine
2 ripe tomatoes, grated
2 tbsp finely chopped dill
Olive oil
Salt and pepper
First, let's make the bisque. Prepare the broth and keep it warm in the pot while we prepare the barley.
In a pot, heat some olive oil and saute the onion, garlic, zucchini, and carrot. Then add the shrimp. Saute them lightly for half a minute. Deglaze with wine and wait for the alcohol to evaporate. Then, remove the shrimp and keep them covered in a clean container. Also, remove the garlic clove skin.
Next, add the barley to the pot and mix it well to coat it with oil. Add the grated tomatoes, reduce the heat, and gradually start adding the broth while continuously stirring the barley. When we see that the liquid is almost gone, add more broth. Repeat until the barley is almost cooked. Just before turning off the heat, season with salt and pepper and add the shrimp.
Serve it hot, garnished with some dill.
