Using thick macaroni that will give you a wonderful texture and a sauce made from smoked Florina peppers, we will create a flavor sensation that will enchant you. The sweet taste of the peppers, combined with the delicate flavor of smoked Vermio cheese, will transport you to a world full of aromas and delights. I challenge you to give it a try!
Here are the ingredients you'll need:
• 6 Florina peppers or a jar of Florina peppers
• 1 pack of No. 6 macaroni
• 1 tablespoon tomato paste
• 2 cloves of garlic, finely chopped
• 1 dry onion, finely chopped
• 250g tomato juice
• 100g smoked Vermio cheese
• 60g olive oil
• Smoked salt from Mesolongi and pepper
• ½ teaspoon smoked paprika
• 1 sprig of thyme
• 1 sprig of oregano
Preheat your oven to 200°C (392°F) and place the peppers inside. Roast them, turning them occasionally. Once they are roasted, cover them with plastic wrap and let them cool. Once cooled, peel them, remove the seeds, and blend them in a blender.
In a small saucepan, saute the onion and garlic lightly. Add the tomato paste, tomato juice, and blended pepper paste. Add a little water, the spices, and let the sauce simmer for ten minutes.
In a separate pot, cook the macaroni according to the package instructions. Once cooked, drain them and return them to the pot.
Grate the Vermio cheese using the wide holes of a grater.
