Penne Pasta with Tomato and Feta
As the weather gets warmer, we crave lighter meals. Today, we will prepare a super easy recipe, perfect for a sunny day, to enjoy in the countryside. Yes! Amongst the trees, down on the grass, just like we did when we were kids! We will lay a tablecloth and sit in nature. We have missed this so much! That's why an aromatic, easy, quick, and incredibly delicious pasta dish is just what we need. Everyone will love it, without a doubt!
Our Ingredients:
1 pack of penne pasta
4 ripe tomatoes, crushed
2 onions, finely chopped
3 cloves of garlic, finely chopped
250g crumbled feta cheese
½ green bell pepper, finely chopped
1 tsp tomato paste
Salt, pepper, oregano
1 tsp fresh basil, finely chopped
Olive oil
We boil the penne pasta for 3 minutes less than the package instructions.
In a small saucepan, saute the onions, bell pepper, and garlic. Add the tomato paste, mix well, and then add the crushed tomatoes, oregano, and basil. Let it simmer for 5 minutes, and then remove from heat.
In a baking dish, spread 2-3 tablespoons of the sauce as the base, followed by the cooked penne pasta. Sprinkle the crumbled feta cheese generously over the pasta, ensuring it covers the dish evenly. Mix everything well.
Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit) and bake the dish for about 15-20 minutes.
Note: There is a recipe circulating online with baked feta and cherry tomatoes. Essentially, it is a variation of "mpougiournti" with pasta. In a baking dish, place cherry tomatoes, drizzle with olive oil, sprinkle with salt, pepper, and oregano, and of course, add the feta cheese. Bake them while boiling the penne pasta. Then, mash the cherry tomatoes with a spatula, dissolve the feta cheese, and add the cooked penne pasta to the dish. Mix well and bake. It's a quick and easy recipe. You can try adding some garlic and basil for extra flavor.
