Let's start by making the shrimp broth. Keep the broth warm in a saucepan near the one where we will cook the risotto.
In a saucepan, heat a little olive oil and saute the shrimp. Saute them for half a minute on each side, then remove them and keep them covered in a clean dish. In the same saucepan, saute the onion. Then add the rice and saute for 3-4 minutes. Deglaze with white wine and, using a spoon, add a spoonful of warm broth to the rice. Continue stirring, add the Kozani saffron strands, and when the rice starts to dry out, add another spoonful of broth. Repeat this process until the broth is finished (you may need slightly less broth depending on the rice you choose). Adjust the taste with salt and pepper.
Serve the risotto hot, garnished with finely chopped dill.
