Sea Urchin Salad

An exquisite salad that requires proper cleaning of the sea urchins. Not all sea urchins are edible. The ones that can be consumed are either reddish-brown, brown, or purple. They usually have small pebbles or seaweed attached to their spines. The best sea urchins are those gathered during the full moon because they have the most eggs.

Ingredients:

  • 15-20 sea urchins
  • 2 tablespoons of lemon juice
  • 4 tablespoons of olive oil

Directions

  1. Put on thick gloves and take a pair of scissors. Cut the sea urchins circularly from the soft side. Rinse them preferably with seawater to remove any sand inside. Use a small spoon to scoop out the eggs, which have a deep orange color.
  2. Place the eggs in a bowl and add lemon juice, olive oil, and a little bit of seawater from the sea urchin.
  3. Mix everything well and serve.
  4. Enjoy with ouzo, good company, and more!
