Slippery or purslane, also known as pigweed, lamb's quarters, or verdolaga. A precious salad green that can be found both wild and cultivated. With its abundance of vitamins, minerals, and trace elements, it is classified among the most beneficial plants. It provides protection against cancer, aids respiratory health, fights cholesterol, gastrointestinal issues, promotes skin healing, acts as a diuretic, lowers blood pressure, is rich in omega-3 fatty acids, is believed to have aphrodisiac properties, and has vermifugal effects (kills intestinal parasites and worms). We consume it in salads, as dried tea, as fresh juice, and its seeds can be used as a decoction.

Our ingredients:
1 bunch of slippery/purslane
2 boiled eggs
5 carob rusks
1 chopped tomato
60 grams of olive oil
1 clove of garlic, finely chopped
30 grams of vinegar
Salt and pepper

Directions

In a bowl, whisk together the olive oil, vinegar, and garlic. Let it sit for an hour to infuse the flavors. Thoroughly wash the slippery/purslane and remove any thick stems. Moisten the carob rusks and crush them at the bottom of the bowl. Next, add the slippery/purslane on top, followed by the chopped tomato and boiled eggs. Pour the olive oil and vinegar dressing over the salad.
