Briam is a traditional Middle Eastern dish that has gained international fame for its incredible taste and ease of preparation. It consists of minced meat, onions, chopped tomatoes, and spices, usually cumin and cinnamon, while in some variations, other ingredients can be added, such as green beans, potatoes, zucchini, etc.
Our ingredients
3 large eggplants, cut into thick pieces
4-5 zucchinis, cut into thick pieces
2 large onions, sliced
2 large potatoes, sliced
2 green bell peppers
2 ripe tomatoes
1 tight tomato, cut into thick pieces
4 garlic cloves ½ bunch parsley, finely chopped
½ bunch mint, finely chopped
Grelia olive oil
Salt - pepper - oregano
Let's start with our vegetables. After washing them well, we start cutting them. The cutting of our vegetables varies from one to the other. And this is because some are harder (potatoes) and some are softer (zucchini, eggplant, onion, etc.).
Therefore, we cut our vegetables separately so that we can get a perfect result in the end with all the vegetables in our plate to be cooked uniformly and not to be melted or some of them crispy.
Preheat the oven.
In a baking dish, sprinkle our vegetables.
In a blender, grate the ripe tomatoes and garlic and add a little water, salt, pepper, oregano, and thyme. Pour the mixture over our vegetables and mix them well so that the sauce goes everywhere.
Cover the dish with a lid and place it in the oven for half an hour. Then remove the lid and bake for another quarter of an hour.
Serve hot or cold as a salad, with fresh bread and Greek feta cheese!
