DROAB DEANS STEW WITH LEMON

Broad beans, also known as fresh lima beans, are a delicious and healthy ingredient that can be used in a variety of dishes. This Cretan recipe for white bean stew with lemon is simple and flavorful, and perfect for a light and refreshing meal.

Ingredients:

  • 1/2 kilogram fresh broad beans
  • 1 large or 2 medium onions, finely chopped
  • Juice of 2 juicy lemons
  • Salt and pepper to taste
  • 250 grams of olive oil

Directions

  1. In a pot, heat up some olive oil and saute the onion.
  2. Add the broad beans to the pot, then pour in the lemon juice and enough hot water to cover the beans by about two fingers.
  3. Lower the heat and simmer until the beans are soft.
  4. Using a spoon, lightly press some of the beans to thicken the stew. Leave some beans whole.
  5. Once the stew has thickened, remove it from the heat and stir in the remaining olive oil.
  6. Let the stew sit for 10 minutes, then serve with finely chopped onion on top.
