EGGPLANT MINI PIZZAS

Easy, quick, delicious, and mouthwatering eggplant mini pizzas that can be prepared in just a few minutes. Once served, they will disappear from the plate! The ingredients we will use include eggplants as the pizza base and whatever we have in our refrigerator! Be creative, use your favorite ingredients, and enjoy this quick snack, light and tasty for your afternoon cravings, a late-night treat, something to munch on during a movie, an appetizer on your table, or a buffet option, among many other possibilities!

Our Ingredients:

2-3 globe eggplants

Tomato sauce

Grated cheese (Gouda, Edam, mozzarella, feta, basically any cheese we have)

Slices of cold cuts (ham, turkey, bacon, etc.)

Finely chopped bell peppers

Finely chopped mushrooms

Thinly sliced sausage

Directions

  1. Rinse and dry the eggplants.
  2. Slice the eggplants into 1 ½ centimeter thick rounds.
  3. Brush them with olive oil and season with salt and pepper.
  4. Place them in a preheated oven at 180°C for approximately 15 minutes.
  5. Remove from the oven and add a little tomato sauce and the desired toppings to each eggplant round.
  6. Place them back in the oven for about 8-10 minutes.
  • A wonderful option for fasting periods is to make these mini pizzas with fasting-friendly ingredients.
  • For vegan and vegetarian groups, it's a delightful snack using your choice of ingredients!
