 A very simple dish, which is essentially grated potatoes with onion. It is prepared for breakfast and served with fried eggs. During the years I worked in hotel breakfasts, it was one of the basic dishes and quite popular since all tourists knew it, no matter where they came from.
The full name is hashed brown potatoes, which means shredded brown potatoes, and their roots come from some parts of the United States. Hash browns or crispy fried potatoes can also be found in the traditional breakfast dish of rosti, which was the farmer's breakfast made from coffee potatoes and corned beef with various vegetables.
In Greece, crispy fried potatoes were a quick and easy dish for breakfast or a light dinner, complemented with feta or kasseri cheese and breadsticks.
Regardless, it is a favorite dish for both adults and children, very easy and quick to make at any time.
Here is the basic recipe:


Ingredients:
• 1/2 grated onion
• 2 large grated potatoes
• Olive oil
• Salt and pepper

Directions

1. Grate the potatoes with a large hole grater. Then, soak them in a bowl of water with salt to remove the starch. Rinse the potatoes thoroughly to remove all starch. Squeeze the potatoes tightly with a towel to remove all the water.
2. Grate the onion and drain the juice. Heat a pan over medium heat with a little bit of olive oil, then add the grated onion and potato, just enough to cover the pan with a layer of potato. Cook slowly on both sides until crispy.
Variations:
• A delicious variation is to add beaten egg after frying the potato. Cook slowly on both sides.
• Another variation is to add grated cheese and fresh chopped onion.
• The classic variation requires soaking the grated potatoes in a saltwater solution. You can also rinse the potatoes in a colander and then salt them. Squeeze the potatoes with a clean towel to remove excess moisture.
