The famous Cretan dish of briam, essentially a vegetable medley with ripe tomatoes, is a traditional and old recipe.
Ingredients:
2 eggplants, cut into pieces (previously drained)
2 potatoes, cut into large pieces
2 green (or red) peppers, chopped
2 handfuls of green beans
1 bunch of chard (washed and keeping the water)
2 ripe tomatoes, grated
4-5 zucchinis, cut into large pieces
1 large onion, roughly chopped
2-3 garlic cloves, sliced
Grelia olive oil
Salt and pepper
In a wide pot, add the olive oil and onion and saute lightly. Then add the eggplants, saute, followed by the green beans, peppers, potatoes, garlic, and mix lightly. Add the zucchinis and a little water from the greens, cover with a lid and let it simmer for 20-30 minutes. Then place the chard on top, cover with the lid again and let it simmer for another 10 minutes. (Check if more water is needed and add accordingly).
Serve with feta cheese and fresh bread.
