Our Ingredients:

6-8 medium-sized potatoes

10 slices of finely chopped bacon

4 fresh onions, finely chopped

250g cream cheese

250g mixed cheeses (Edam, Cheddar, Vermio, etc.)

100g heavy cream

1 clove of garlic, melted

Salt, pepper, thyme, oregano, smoked paprika

Finely chopped parsley

Butter for baking

Directions

In a pot, boil our potatoes for about 10-12 minutes. Drain them. In a small pan, saute the chopped bacon, onion, and finally add the garlic. Remove from heat. Preheat our oven to 200°C (392°F). Take the potatoes, cut them in half, and use a spoon to scoop out most of the potato flesh and place it in a bowl. Add the sauteed bacon, onion, and garlic to the bowl, along with cream cheese, various cheeses, and heavy cream. Add our spices. Mix well and stuff our potatoes. Place them in a baking dish and top them with a small piece of butter. Bake in the oven until they become golden. Serve with finely chopped parsley.

  • While boiling our potatoes, add a little salt. The boiling time depends on the size of the potatoes.
  • For a lighter version, we can use light cream cheese and replace bacon with turkey.
  • In the mixed cheeses, I prefer to include Cheddar for its creamy and buttery flavor, as well as Vermio smoked cheese, which pairs perfectly with bacon and thyme.
  • Adjust the spices according to your taste.
  • If you don't have fresh onions, replace them with dried ones. If you like onion, you can use both.
