... and what about those of us who have issues with gluten? Who said we can't enjoy a flavorful and fluffy cookie with our favorite cup of coffee? We can, and we definitely will. Let's go ahead and make them!

This specially designed gluten-free cookie allows us to indulge in our habit without worrying about the consequences of gluten. It's a wonderful treat that enables us to enjoy our favorite pastime without any concerns.

Let's gather our ingredients:

  • 200g gluten-free flour (Agios Georgios brand)
  • 500g all-purpose flour (Agios Georgios brand)
  • 250g butter
  • 190g powdered sugar
  • 50g fresh milk
  • 18g baking powder
  • 1 vanilla bean
  • Zest from 1 orange
  • 1 egg
  • 3 tsp xanthan gum
  • 2 egg yolks for brushing

Directions

In a bowl, beat the butter and powdered sugar together until well combined. Then, add the egg, baking powder, milk, orange zest, xanthan gum, and vanilla bean. Finally, sift the flours and add them to the mixture.

Shape the dough into cookies and brush them with the egg yolks. Place them on a silicone baking mat or greased baking sheet.

Bake in a preheated oven at 180°C (350°F).

Once they are done, allow them to cool to firm up slightly.

Note: Place the cookies on a silicone baking mat or greased surface as they are very fluffy, and if they stick and are handled too roughly, they may break apart.
