During a trip I took, I received a bag of Lemnian flomaria, which are small pasta shapes made on the island of Lemnos, known for their delicious taste. So, I decided to create a dish inspired by Greece, featuring smoked pork from Crete, Metsovone cheese, and cow's milk yogurt. I also added some thyme from my father's garden and sun-dried tomatoes. It's simply divine!


Ingredients:
• 500 grams of Lemnian flomaria pasta
• 350 grams of smoked pork, cut into pieces
• 1 small pot of cow's milk yogurt
• 10 sun-dried tomatoes, finely chopped
• 100 grams of smoked Metsovone cheese, grated
• 1 portobello mushroom, diced
• 3-4 fresh shallots, finely chopped
• 1 clove of garlic, finely chopped
• Vegetable broth (optional)
• ½ wine glass of white wine

Caramelized Onion Focaccia


Focaccia is a type of Italian bread or flatbread that was traditionally made in Italy and can be considered a precursor to pizza. In the old days, during times of scarcity, homemakers would make focaccia with whatever ingredients they had in the fridge. Guinea Fowl Stifado

Guinea fowl, also known as "φραγκόκοτα" or "φαραόνι" (small), is a highly flavorful poultry with darker meat compared to other birds. Its taste resembles game meat such as partridge or pheasant. Guinea fowl meat is lean, low in fat, yet rich in nutrients, including healthy fats and protein. Due to its low-fat content, it doesn't become greasy when cooked but can become tough if overcooked. Today, we have some fresh guinea fowl from the village, along with a bottle of red wine. So, we'll prepare a delicious stifado. Although you can enjoy it on its own, it pairs wonderfully with freshly fried potatoes, linguine, mashed potatoes, or even crispy pilaf. The choice is yours!


Ingredients:
• 1.5 kilograms of diced guinea fowl
• 1.5 kilograms of small onions, peeled
• 3-4 cloves of garlic
• 1/2 wine glass of red wine
• 1 can of tomato concentrate

Sweet Bobota

Dad came back from the village, and once again we delved into the years of the occupation. These conversations have been told countless times, yet I always enjoy listening to Dad narrate his experiences and challenges. My grandmother Panagiota, with her many children, the poverty they endured, and how resilient she was. I've heard my dad tell the story of how one day, as he was walking down the street, a truck loaded with Italians passed by. They saw him, a small, weak boy, and one of the Italians shouted, "PICOLO...E...PICOLO..." and offered him food in a metal container. He quickly devoured it and returned the container, but the spoon remained in his hand. The Italians left, and my dad hurried home, frightened. In his hands, he held the spoon that the Italians had left him. When he entered the house, he gave it to my grandmother, who noticed that the spoon had a swastika engraved on it. It was a spoon from the German army. My grandmother often made bobota. When she had sugar or honey, she would make sweet bobota. She added walnuts or raisins, whatever she had, with a hint of cinnamon. When they had sweet bobota...it was a celebration! So, based on my grandmother's recipe, we will make a sweet bobota for my dad to eat and reminisce about his childhood.

Lemon Cookies

Lemon Cookies I returned from Platana, my village, full of lemons. We have 2 lemon trees there, very fruitful, meaning they produce fruit almost all year round. They are resilient and have found their place, so to speak... So, besides making lemon spoon sweet and lemon zest (which I will definitely do), (Now that I think about it... a lemon pie would be famous, maybe I'll add it to the menu), I will also make cookies to put in the jar in the kitchen, for those difficult times... you know... for TV, coffee, something to satisfy the cravings... Plenty of lemons... I will squeeze some and pour the juice into ice cube trays for freezing. They are very helpful in cooking when I want to add lemon to a dish. So, let's start making our cookies and let the house smell amazing!

Easy apple pie

 

Easy Apple Pie An easy and quick apple pie that is delicious for your afternoon snack, after a meal, or even with your coffee.

For the crust:

Pate sucree dough

250g all-purpose flour

125g butter

2 tsp powdered sugar

? tsp salt

1 egg

In a bowl, mix the flour, powdered sugar, and salt. Add the cold butter, cut into small cubes, and mix with your hands to prevent the butter from melting. The mixture should become slightly yellow. Add the egg and knead the mixture until it forms an elastic dough. Wrap it in plastic wrap and refrigerate for about an hour.

After an hour, roll out the dough on a lightly floured surface and place it in your tart pan. Use your fingers to shape the dough in the pan. Pierce the dough with a fork. Bake in a preheated oven at 160°C (320°F) for 8 minutes with weights, then remove the weights and bake for another 8 minutes.

For the filling:

3 medium-sized apples, thinly sliced

100g brown sugar

1 tsp cornstarch

? tsp nutmeg

½ tsp cinnamon powder

Fig Jam

 

The most delicious sweet, juicy figs come from my garden. I am from Kimi and its figs are famous all over the world. The fig trees here are so full - the branches are almost bending from the weight of the figs... I will pick some to make jam, but because they are so sweet, I won't add sugar, but instead I will use fig molasses (or if you don't have it, you can substitute with honey). Aromatic and wonderful fig molasses or honey that will bring out the best in the figs and make my jam wonderful!!!
